- Salt and pepper, to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Season chicken breasts with salt and pepper.
- In a skillet, heat olive oil over medium heat and brown chicken breasts on both sides (about 3 minutes per side). Transfer to slow cooker.
- In a bowl, whisk together heavy cream, chicken broth, lemon juice, lemon zest, garlic, thyme, rosemary, and oregano.
- Pour the lemon herb mixture over the chicken in the slow cooker.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours, until chicken is tender and cooked through.
- Remove chicken, and if desired, thicken the sauce by simmering it on the stove for a few minutes.
- Serve chicken topped with sauce and garnish with fresh parsley.
