  • 2 cups all-purpose flour

  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg

Wet Ingredients

  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 tsp vanilla extract

  • 1 1/2 cups peeled and chopped ripe peaches (fresh or canned, well-drained)
  • 3/4 cup chopped pecans (toasted for extra flavor, optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat eggs, oil, granulated sugar, brown sugar, and vanilla until smooth.
  4. Gradually stir the dry ingredients into the wet ingredients until just combined—do not overmix.
  5. Fold in chopped peaches and pecans gently.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Substitute peaches with nectarines, apricots, or even apples depending on the season.
  • Lightly dust the chopped peaches with a tablespoon of flour before folding them in to prevent sinking.
  • This bread freezes beautifully—wrap tightly and store for up to 3 months.
