- 2 tbsp milk
- 1/2 tsp vanilla extract
Instructions
- Make filling: In a saucepan, combine peaches, sugar, cinnamon, nutmeg, cornstarch, and lemon juice. Cook over medium heat until thickened and bubbly, about 5-7 minutes. Let cool.
- Prepare dough: Separate biscuit dough into individual biscuits. Roll each biscuit into a flat circle about 4 inches in diameter.
- Assemble hand pies: Spoon 1-2 tablespoons of peach filling onto the center of each dough circle. Top with another flattened biscuit and seal edges by pressing with a fork, creating a donut shape by cutting a small hole in the center of the top dough layer.
- Heat oil: Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
- Fry pies: Carefully fry hand pies in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.
- Coat and glaze: While still warm, toss pies in cinnamon sugar mixture. Drizzle with optional glaze if desired.
Notes
- You can bake these hand pies at 375°F (190°C) for 15-18 minutes instead of frying for a lighter option.
- Use canned peaches if fresh aren’t available, just drain excess liquid.
