Description

No-Bake Chocolate Quinoa Crunch Clusters are a healthy, crunchy-sweet treat made with just a few ingredients! Popped quinoa and rich melted chocolate come together in perfect bite-sized clusters that are naturally gluten-free, protein-packed, and perfect for snacking or gifting.


Ingredients

  • 1 cup popped quinoa (or puffed quinoa)
  • 1 cup dark chocolate chips (or semi-sweet)
  • 1 tablespoon coconut oil
  • 1/4 teaspoon sea salt
  • Optional mix-ins: 2 tablespoons chopped nuts, dried fruit, or shredded coconut

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a heatproof bowl, melt chocolate chips and coconut oil together using a microwave (30-second bursts, stirring in between) or a double boiler until smooth.
  3. Stir in popped quinoa and sea salt. Add any optional mix-ins if using.
  4. Drop spoonfuls of the mixture onto the prepared baking sheet, shaping into small clusters.
  5. Chill in the refrigerator for 20–30 minutes, or until firm.
  6. Store in an airtight container in the fridge for up to 1 week.
