- 1 cup popped quinoa (or puffed quinoa)
- 1 cup dark chocolate chips (or semi-sweet)
- 1 tablespoon coconut oil
- 1/4 teaspoon sea salt
- Optional mix-ins: 2 tablespoons chopped nuts, dried fruit, or shredded coconut
Instructions
- Line a baking sheet with parchment paper.
- In a heatproof bowl, melt chocolate chips and coconut oil together using a microwave (30-second bursts, stirring in between) or a double boiler until smooth.
- Stir in popped quinoa and sea salt. Add any optional mix-ins if using.
- Drop spoonfuls of the mixture onto the prepared baking sheet, shaping into small clusters.
- Chill in the refrigerator for 20–30 minutes, or until firm.
- Store in an airtight container in the fridge for up to 1 week.
