Description

These Mini Milk Tart Tarts are a delightful twist on the classic South African milk tart. With a buttery, crisp pastry shell filled with a creamy, cinnamon-dusted custard, they’re perfect for teatime, dessert tables, or a sweet snack.


Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg yolk
  • 12 tablespoons cold water
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons all-purpose flour
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter
  • Ground cinnamon, for dusting

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and powdered sugar. Cut in the cold butter until mixture resembles breadcrumbs.
  3. Add the egg yolk and enough cold water to form a dough. Wrap in plastic wrap and chill for 20 minutes.
  4. Roll out the dough and cut circles to fit mini tart pans or a mini muffin tin. Press dough into the pans and prick the base with a fork.
  5. Bake for 12–15 minutes or until golden brown. Let cool.
  6. In a saucepan, heat the milk until just simmering.
  7. In a separate bowl, whisk together sugar, cornstarch, flour, and eggs until smooth.
  8. Slowly pour hot milk into the egg mixture, whisking constantly.
  9. Return mixture to the saucepan and cook over medium heat until thickened, stirring constantly.
  10. Remove from heat, stir in vanilla extract and butter until smooth.
  11. Pour custard into cooled tart shells and smooth the tops.
  12. Dust generously with ground cinnamon and chill until set before serving.

Notes

  • You can prepare the tart shells a day ahead and store them in an airtight container.
  • For extra flavor, infuse the milk with a cinnamon stick while heating.
  • Best served chilled for a firmer texture.
