Instructions

  1. In a bowl, whisk together soy sauce, honey, apple cider vinegar, sesame oil, garlic, black pepper, onion powder, and smoked paprika.
  2. Add chicken slices to the marinade, ensuring all pieces are coated. Cover and refrigerate for at least 6 hours or overnight for best flavor.
  3. Remove chicken from marinade and pat dry with paper towels to remove excess moisture.
  4. Preheat air fryer to 180°F (82°C) if your model allows (or use the lowest possible temperature).
  5. Place chicken strips in a single layer in the air fryer basket, leaving space between each piece.
  6. Air fry for 2 to 3 hours, flipping halfway through, until chicken is dry, chewy, and slightly leathery but not brittle.
  7. Let jerky cool completely before storing in an airtight container.

  • For even drying, slice chicken as uniformly thin as possible (1/8 to 1/4 inch).
