- 3 cups fresh strawberries, hulled and sliced
- 3/4 cup granulated sugar
- 2 tbsp cornstarch
- 1 tsp lemon juice
- 1/2 tsp vanilla extract
Dough and Frying
- 1 package refrigerated pie crusts (2 crusts)
- Vegetable oil, for frying
- Powdered sugar, for dusting
Instructions
- Prepare filling: In a saucepan, combine strawberries, sugar, cornstarch, and lemon juice. Cook over medium heat, stirring frequently, until thick and bubbly (about 5-7 minutes). Remove from heat and stir in vanilla extract. Let cool.
- Prepare dough: Roll out pie crusts on a floured surface. Cut into 4-5 inch circles.
- Assemble pies: Spoon cooled strawberry filling onto half of each circle, leaving edges clear. Fold dough over to form a half-moon and press edges with a fork to seal.
- Heat oil: In a deep skillet or fryer, heat vegetable oil to 350°F (175°C).
- Fry pies: Carefully fry pies in batches for 2-3 minutes per side until golden brown and crispy.
- Drain and serve: Remove pies and drain on paper towels. Dust with powdered sugar before serving.
Notes
- Use fresh or frozen strawberries (thawed) for the filling.
- Serve with vanilla ice cream or whipped cream for extra indulgence.
- Make sure oil temperature stays consistent for even frying.
