  • 2 tablespoons olive oil

  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 1 cup chicken broth
  • 1/4 cup apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Pat chicken thighs dry with paper towels and season generously with salt and pepper.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat. Place chicken thighs skin-side down and sear for 7–9 minutes, until the skin is deeply golden and crisp. Flip and cook for another 3–4 minutes. Transfer chicken to a plate.
  4. In the same skillet, reduce heat to medium and sauté onion until softened, about 3 minutes. Add garlic and cook for 30 seconds.
  5. Stir in cannellini beans, chicken broth, apple cider vinegar, Dijon mustard, and red pepper flakes. Simmer for 3–4 minutes, scraping up browned bits from the pan.
  6. Return chicken thighs to the skillet, skin-side up. Transfer skillet to the oven and roast for 20–25 minutes, or until chicken is fully cooked (internal temp 165°F / 74°C).
  7. Remove from oven, sprinkle with fresh parsley, and serve hot.

Notes

  • For richer flavor, add 2 slices of chopped bacon when cooking the onions.
  • If you prefer a creamier sauce, stir in 2 tablespoons of heavy cream before returning the chicken to the skillet.
