- 2 large boneless, skinless chicken breasts (halved horizontally)
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup Italian-style breadcrumbs
- 1/2 cup grated Parmesan cheese (divided)
- Salt and black pepper, to taste
- 2 tbsp olive oil
- 2 tbsp butter
- 2 cups heavy cream
- 2 cloves garlic, minced
- 1 cup grated Parmesan cheese (for sauce)
- Chopped parsley, for garnish (optional)
Instructions
- Cook fettuccine according to package instructions. Drain and set aside.
- Season chicken cutlets with salt and pepper. Dredge each piece in flour, dip in beaten eggs, then coat in a mixture of breadcrumbs and 1/4 cup Parmesan cheese.
- Heat olive oil and butter in a skillet over medium heat. Cook chicken cutlets until golden brown and crispy, about 4–5 minutes per side. Transfer to a paper towel–lined plate.
- In a saucepan over medium heat, add heavy cream and garlic. Simmer for 3–4 minutes.
- Stir in remaining Parmesan cheese and season with salt and pepper. Continue stirring until sauce thickens, about 3 minutes.
- Toss cooked fettuccine in the Alfredo sauce until evenly coated.
- Slice crispy chicken and serve on top of the pasta. Garnish with parsley and extra Parmesan if desired.
