  • 2 tbsp butter
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream (optional for creamier gravy)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced

Instructions

  1. Season both sides of the chicken breasts with Cajun seasoning, salt, and pepper.
  2. Heat olive oil in a large skillet over medium heat. Add chicken and sear for 5–6 minutes per side, or until golden brown and cooked through. Remove from skillet and set aside.
  3. In the same skillet, melt butter. Add chopped onion and cook for 3–4 minutes until softened. Add minced garlic and cook for 30 seconds.
  4. Whisk in flour and cook for 1–2 minutes to form a roux.
  5. Slowly pour in chicken broth while whisking to avoid lumps. Bring to a simmer and cook until the gravy thickens, about 5–7 minutes.
  6. Stir in heavy cream if using, and adjust seasoning to taste.
  7. Return the chicken to the skillet, spoon gravy over the top, and let simmer for 2–3 minutes to reheat the chicken.
  8. Serve hot over mashed potatoes, rice, or biscuits.
