- 4 medium sweet potatoes
- 2 cups cooked shredded chicken
- 3/4 cup BBQ sauce (your favorite brand or homemade)
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- Salt and pepper, to taste
- Optional: sour cream or Greek yogurt for topping
Instructions
- Preheat oven to 400°F (200°C). Pierce sweet potatoes several times with a fork and bake directly on the oven rack for 45-60 minutes, or until tender.
- While sweet potatoes bake, in a bowl, mix shredded chicken with BBQ sauce. Season with salt and pepper to taste.
- When sweet potatoes are done, let cool slightly. Cut each sweet potato in half lengthwise and scoop out some of the flesh, leaving a border to keep the skins intact.
- Mix the scooped sweet potato flesh with the BBQ chicken mixture.
- Spoon the mixture back into the sweet potato skins and top each with shredded cheddar cheese.
- Return stuffed sweet potatoes to the oven and bake for an additional 10-15 minutes, or until cheese is melted and bubbly.
- Remove from oven, sprinkle with chopped green onions, and add a dollop of sour cream or Greek yogurt if desired before serving.
