- 4 cups fresh or frozen sweet cherries, pitted and halved
- 2 tablespoons lemon juice
- 3 cups granulated sugar
- 1 package (1.75 oz) fruit pectin (like Sure-Jell)
- 1/4 cup amaretto liqueur
Instructions
- In a large pot, combine cherries and lemon juice. Gently mash some of the cherries with a potato masher for texture.
- Stir in pectin and bring the mixture to a full rolling boil over high heat, stirring constantly.
- Add sugar all at once and return to a full boil. Boil hard for 1 minute while stirring.
- Remove from heat and stir in amaretto liqueur.
- Skim off any foam and ladle hot jam into sterilized jars, leaving 1/4-inch headspace.
- Wipe rims, seal with lids and rings, and process in a boiling water bath for 10 minutes (adjusting for altitude as needed).
- Let jars cool completely. Store sealed jars in a cool, dark place. Refrigerate after opening.
Notes
- Use tart cherries if you prefer a tangier jam—adjust sugar to taste.
- Don’t skip the lemon juice—it helps the jam set and balances the sweetness.
- For a non-alcoholic version, use almond extract (start with 1/2 teaspoon and adjust to taste).
